Very popular meal made from semi-ripe plantain and mixed vegetables. A very colorful sumptuous meal fit for the palace.


In preparation, deep fry plantains and blot on tissue. Heat up oil in skillet and add in onions, garlic and ginger to brown. Add chicken, bouillon cube and salt to brown together while stirring. Add chopped tomatoes and let cook for about 5 minutes. When
tomatoes are tender, add all varieties of chopped peppers (green, red and yellow). Mix up gumbo of chicken onions and peppers. Add fried plantain slices and stir with the chicken broth. Let the whole mixture cook for about 6 minutes and serve hot. Number of
