Huckleberry stew (njama njama)

Huckleberry (njama njama). Very popular nutritious vegetable meal that is eaten with corn fufu in the North West part of Cameroon. Huckleberry is from the same family as watercrest.

Method

Pick, wash and slice vegetables Heat up oil and add meat or fish to brown for a few minutes. Add diced tomatoes and desired seasonings and let it simmer for about 10 minutes until tomato gets cooked. In parallel, parboil vegetables and drain. Squeeze the
vegetables dry and add into the tomato sauce. Serve with corn fufu.
