Jollof rice is a beef/vegetable/rice combo dish that is prepared similarly to spanish rice. Cooked and enjoyed in most parts of


Boil meat with seasonings to taste. Save the broth. Heat up oil in a skillet. Add in onion, meats and other seasonings to taste and let brown for a few minutes. Add in blended or chopped tomatoes and cook until the tomato loses its acidity. Season the
sauce to taste. Add the broth into the sauce. Add in washed/drained rice into the cooked tomato sauce and broth. Estimate two cups of liquid for each cup of rice. Put pot with its contents in the oven preheated to 350 degs. Let rice bake/cook for 45 mins.
Once rice is tender, take out and set to cool. Serve while hot.
