Method
Soak, crush and remove the peel from black eyed peas. Blend the peas to a get a homogenous texture Add palm oil, sliced onions, fresh pepper, spinach leaves and salt or bouillion cube to taste. Wrap in plantain leaves or in foil Place wrapped koki beansin a steam pot and steam cook for an hour. Take out and cool and slice to serve with plantains or yams.
